Ingredients

  • 3 ripe bananas, peeled (the riper, the better)
  • 2 eggs
  • ½ c. plain Greek yogurt
  • 1/3 c. honey
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 ½ c. wheat flour
  • 1 c. blueberries

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, mash the bananas until creamy, leaving some small lumps throughout.
  3. Add eggs and combine thoroughly.
  4. Add yogurt, honey, vanilla extract, and baking soda to banana-egg mixture, and combine thoroughly.
  5. Add wheat flour and again combine thoroughly.
  6. Gently fold blueberries into batter.
  7. Grease bottom and sides of a standard size loaf pan.
  8. Add prepared batter to greased loaf pan.
  9. Bake at 350 degrees F for 50 minutes, or until a wooden pick inserted in the center comes out clean.
  10. Cool the baked bread in the loaf pan for 10 minutes, then transfer to a wire rack to continue cooling.
