If you were under the impression that homemade tomato soup was difficult to make, think again!
The tomato soup itself gets a great start with Roma tomato halves combined with olive oil, seasonings, garlic cloves, and onions.
(Actually, any kind of tomato will work great…Romas make the prep time much shorter, although you could even use cherry tomatoes if you wish, which will just slightly increase the prep time, as it will take longer to halve many cherry tomatoes than it will to halve Romas.)
The combo. is roasted at a somewhat high temperature for about 40 minutes.
The roasted tomatoes, garlic, onion and seasonings are then placed into a blender, and blended for just a very short amount of time.
If you find that your tomato mixture is a bit thicker than you would like, you can thin it up with some meat or vegetable broth if you want!
Other great additions that will make this soup shine include heavy cream or yogurt!
After blending, the mixture is poured into a saucepan and heated further on the stovetop.
