With just a few ingredients, Valerie Bertinelli’s Easy No Churn Lemon Ice Cream recipe can be prepared in no time at all!
Valerie demonstrates just how very easy it is to make homemade ice cream during an episode of her cooking show, Valerie’s Home Cooking.
Her recipe was inspired by a Mediterranean flavor – lemon swirled with raspberries – and she used just a handful of ingredients to create it.
The entire recipe requires only 5 (yes, you saw it right…five) ingredients!
There is a lemon flavor to Bertinelli’s no-churn ice cream, but there is also a raspberry swirl that runs through the ice cream. What is the secret to getting those swirls? How does she get them? The first thing she does is make a coulis.
In simple terms, what is a coulis? As Bertinelli said on Valerie’s Home Cooking it’s a “fancy way of saying we’re going to make some raspberry sauce.”
Fresh raspberries are cooked with water and sugar in a pot on the stove, using fresh raspberries as the main ingredient.
In order to remove any seeds from the raspberry sauce, Bertinelli ran it through a strainer with the help of a wooden spoon to ensure that it was smooth as possible.
Her next step was to whip the cream while it cooled, and then gently fold it all together. It is at this point that Bertinelli pours half of the mixture into a loaf pan before making swirls of raspberry filling in the middle. A second layer of the cream mixture was added and more swirls were done. That’s all there is to it.
