There is something about the sweet flavor of mangoes that makes this salad stand out from other ordinary salads. It is highly recommended that you add some toasted almonds on top of this dish. Despite the fact that we forgot to add them in before taking the picture, they added a nice crunch and complemented the mango very well.

Avocado, Chicken, Mango, Corn, and Cilantro Salad!
Prep Time: 10 – 15 minutes
Cook Time: 15 minutes
Serves: 1
Salad Ingredients:
One-quarter medium red onion, thinly sliced
7 plum or cherry tomatoes, cut into quarters
3 oz. mango, peeled, seeded, and chopped into bite-size pieces
1 Tbsp. fresh cilantro, chopped
¼ c. uncooked corn kernels (if using frozen corn, thaw completely prior to adding to salad)
4 oz. boiled chicken breast, cut into bite-size pieces
1 oz. avocado, chopped into bite-size chunks
Salad Dressing Ingredients
1 tsp. olive oil
1 tsp. lime juice
1 tsp. honey
Salt and pepper, to taste
Directions:
- To a serving bowl, add the red onion slices, quartered cherry tomatoes, chopped mango, chopped cilantro, corn kernels, and chopped chicken breast. Gently toss together using two forks.
- In a small bowl, combine all salad dressing ingredients together.
- Add chopped avocado to the salad in the serving bowl and again gently toss to combine with the remainder of the salad. (Avocado is left to be added last, to prevent browning.)
- Pour salad dressing over salad and toss again gently to combine.
- Serve and enjoy!
