Cucumber Tomato Avocado Chicken Salad Recipe

Salad Ingredients:
½ medium cucumber, peeled and chopped into bite-size cubes
8 cherry tomatoes, halved
¼ medium yellow onion, chopped
1 Tbsp. chopped fresh parsley
1/8 tsp. garlic powder
1/8 tsp. onion powder
1/8 tsp. dried oregano
1/8 tsp. chili powder
1/8 tsp. ground cumin
1/8 tsp. paprika
Salt and pepper, to taste
5-oz. chicken breast, skinless and boneless
1 Tbsp. olive oil
½ avocado, pitted and peeled
Dressing Ingredients:
2 Tbsp. lemon juice
Salt and pepper, to taste
Directions:
- Chop cucumber, halve cherry tomatoes, and chop onion and fresh parsley. Add all to a serving bowl and set aside.
- In a small bowl, combine garlic powder, onion powder, oregano, chili powder, cumin, paprika, and salt and pepper.
- Place chicken breast on cutting board and dry-rub spice mixture onto all sides.
- In a skillet, heat 1 Tbsp. olive oil over medium-high heat.
- When heated, add the spice-rubbed chicken breast and brown chicken breast on all sides, until chicken is cooked through and juices run clear.
- While chicken is browning, cut into cubes half of a peeled and pitted avocado, and add cubed avocado to serving bowl.
- Transfer cooked chicken breast from skillet to cutting board, and cut cooked chicken into bite-size cubes. Add chicken to serving bowl.
- Mix together the salad dressing ingredients.
- Pour dressing over the salad and toss gently with two forks.
- Serve while chicken is still warm.
